The Bible Project - Outstanding collection of animated videos summarizing the content and meaning of each book of the Bible and of important biblical themes. For older children, teens, and adults, we recommend watching their Bible book introduction videos as you prepare to begin reading each book.
The Gospel of Matthew and The Book of Acts by The Visual Bible - Released in 1993 and 1994, respectively, they're now a little dated, but Matthew especially is well-produced, and both are worth watching. Each one follows the biblical text (NIV) word-for-word—an engaging way to introduce your child to those books.

APOLOGETICS FOR KIDS
The Young Defenders Series by Melissa Cain Travis - Fun stories that explain solid scientific and philosophical evidences for the Christian faith at a level kids can understand. Designed for ages 7-11 and adults who want to be able to answer kids' real questions about God. We've not had the chance to read these for ourselves yet, but have heard them recommended. Volumes include How Do You Know God Is Really There?, How Do You Know God Created Life?, How Do We Know Right from Wrong?, and How Do We Know Jesus Is Alive?
